The Making of Cut & Cook BBQ
After filming a few Cut & Cook BBQ events. I decided to do a little Making Of video to show some of the tips for BBQ'ing and the prcess of the day. Talk to some DJ's and be an all round idiot.
It starts with the getting the big Radar Hill smoker in position. Get the fire lit and turnt. Then once it's all at temperature. I can start the cooking of the pork neck (pulled pork) + Ribs mmmmyumbers. I marinated the pork neck in my special rub: Salt
Pepper
Paprika
Coriander
Garlic
Chilli
Brown Sugar
Honey
For the Ribs I use a wet rub of Mustard and then the same Dry Rub as the Pork neck.
Cooked for 2hrs then wrapped and cooked for 2hrs
I had already half cooked it the day before and had it wrapped in the esky overnight.
I then Put the Brisket back on the heat to get it up to 203F.
Served with Tacos and Buns and Slaw and Salsa to make your own combo :)
